Pie Crust Cookies

Ever get your pie crusts all nicely rolled out and still have some dough left over?  What to do, what to do…

My mom taught me to roll them out flat and sprinkle them with cinnamon & sugar, and bake.  We devoured them like cookies.

I use my tweaked and re-tweaked pie crust recipe.  Find it here…

Roll out, sprinkle with cinnamon & sugar; bake at 350° for 8-10 minutes, or until lightly browned.
